One Dish Dinner Meals

thai_friedrice

At the end of a hectic day, quick one dish meals can be a wonderful solution for dinner. Regardless as to whether or not you have children at home who are wanting their dinner NOW, you will still find that these dinners are a great solution to your otherwise busy schedule. If you only have 1 or 2 people for whom you are cooking, you should not forgo these meals either. In fact, they will leave you with some great leftovers for your next meal, making things even easier.

Most one dish meals can be cooked in just 30 minutes. Nevertheless, these meals are still very tasty and filling. You simply have all of your meat, vegetables and extras (like pasta or rice) in just one dish. This means that you will only have a pan or 2 to clean. Furthermore, you will also find that these meals are also a lot more healthy for you than the fast food that you may have opted for before you knew just how quick and easy these meals were to make. Of course, this will also save you a lot of money since fast food is so expensive these days.

As you can see, there are a lot of benefits to one dish meals, which is why so many people love to make them. So, the next time that you need something quick for dinner, you really should try a one dish meal like fried rice, chicken in crockpot, chicken & sweet potato soup, baked lasagna, etc.  These will provide you an excellent, homemade option for your hectic lifestyle.

Sarawak Laksa From Madam Tang’s

mdmtang

Madam Tang’s was listed as one of the past winner of best Sarawak Laksa in Kenny Sia’s Hawker Food Award. Unfortunately, I beg to differ after trying out their dish at their newly opened stall at The Spring Shopping Centre. It was not only pricey at $5.80 for a regular bowl but it was TOO OILY for my liking. Trust me, I’m such a huge fan of Sarawak Laksa that 99% of the time, I will finish every drop of the soup but I could not even finish half the soup this time. Furthermore, I hated that they used boiled egg cut in half instead of the usual shredded omelette.

Bento

pinkbentobox

In simple terms, bento is a take out or home cooked meal, packed in special lunch boxes called bento. Bento boxes, be it lacquered wood or plastic, come in a vareity of attractive designs and colours. There are several compartments in a bento box, with some even having stacked layers.

Different types of food are arranged in these individual compartments, which will then be wrapped in cloth or a special bag to include a pair of chopsticks, drink flask, napkin and for those who prefer Western utensils -  knife, spoon or fork.

Bento making for children has grown into a huge hit among Asians because the aesthetic pleasing food is a source of motivation for young children to eat food that they would otherwise ignore, such as vegetables. Enthusiastic mommies enjoy creating adorable and attractive cartoon, animal and human characters from nature using edible food colourings and cookie cutters. These adorable bite-sized meals are a feast to the eyes as well as the stomach. They also provide nutritional values such as carbohydrate, protein and fat.

Kan Pua Mee From Lee Cafe

leecafe

Lee Coffee Shop, located at Jalan Setia Raja, opposite to the Stutong Wet Market is a coffee shop I frequent due to the Kan Pua Mee, which I consider as one of the best in Kuching. If you’re trying them out for the first time, I would recommend you to go on week days. Weekends are usually very packed.

Besides Kan Pua Mee, the Char Kueh is also good (right side stall in the picture above). There are also stalls selling Roti Canai, porridge, kolo mee, mee curry, laksa and ham & egg sandwiches.

My rating for this Kan Pua Mee is 4 over 5

Creative and Quick Lunch Ideas

nachos

Lunch time has a way of sneaking up on a lot of us busy mothers. Once this happens we find ourselves looking around our pantries for something quick and easy to make. Thankfully you can make a kid friendly lunch dish from almost anything that you can find in there. Here are a few ideas to help you get started:

  1. Add some steamed broccoli or a can of green beans and some chopped ham lunch meat or canned chicken chunks to a box of macaroni and cheese.
  2. Take a box of stuffing and mix it with your favorite can of soup. Pour these together into a casserole dish and bake it at 350 degrees Fahrenheit until the top is golden brown. You can also open a can of chicken and add it to the mix.
  3. If you happen to have some tortilla chips place them into a microwavable dish and top them with some canned chicken, canned vegetables and some cheese. Simply microwave this until the cheese melts. You can serve it with salsa and sour cream. Kids love this feeling lunch because it’s more like a snack.

As you can see, simply by looking around your pantry you will be able to come up with a lot of quick, fun lunch ideas. These aren’t only good for kids but adults will also love them too. All it takes is a little creativity in order to make something delicious and filling the next time you need a lunch dish.
