Baked some black bottom cupcakes over the weekend for Mother’s Day. The recipe I used was meant for 12 cupcakes but I only managed to get 9 cupcakes with extra cream cheese left, enough for 4 more cupcakes. Thus, will need to adjust the portions in another attempt and fine tune the recipe as I feel that adding some more cocoa would make the cake more delicious as I love rich chocolate cakes. The texture of the black bottom cupcakes were moist and dense. My dd is an excellent cake tester and since these were gone in two days, I guess they passed the test. Will share the recipe once I am satisfied with the adjustments made to the original recipe.
