Who doesn’t love pizza? Whether you like it plain or loaded with pepperoni, you’ve probably tried it. It’s one of those basic dishes that can be made into almost anything you want with just the right toppings. You can get your share of veggies on top of pizza, or pack it with protein with multiple meats. It’s always fun to try a new pizza recipe because the dish is so easy to make and quick to prepare. If you’re looking for an artisan style pie, try this delectable Chorizo and Caramelized Onion Pizza. It sounds exotic, yet it is so simple and packed with flavor.

For this pizza recipe, you will need:

  • 1 (12-inch) thin pizza crust,
  • 3 oz. of Alfredo sauce,
  • 1 white onion, thinly sliced and caramelized,
  • 3 oz. cured Spanish-style chorizo sausage sliced as thin as you like,
  • 1 roasted red pepper with the seeds removed and thinly sliced,
  • cilantro and 1-1/4 cups (5 oz.) of Authentic Mexican Cheese, divided.  This perfectly blended cheese accents rich Queso Quesadilla, Asadero and Queso Gallego with Anejo Enchilado and Manchego cheeses.

To prepare this pizza, simply spread your Alfredo sauce evenly over the crust. Top with sautéed onions and sprinkle evenly with 1 cup of Authentic Mexican Cheese. If you’ve never caramelized onions before, it’s easy. Just cook your onions in 1 Tbsp. of canola oil over medium heat until they are soft and caramel in color. Next, top your cheese with chorizo and red pepper and then sprinkle with the remaining cheese. Season your pie with salt and freshly cracked black pepper. Have your oven preheated to 425 degrees and when ready, bake for 10 – 12 minutes or until the crust is golden brown. Finally, when your pizza is ready, garnish it with fresh cilantro. This zesty pizza serves four as a meal and eight as an appetizer and can be prepared in just 22 minutes. It’s a great quick lunch or dinner that friends or family can enjoy, if you feel like sharing.
