Frosted some with butter cream icing for the kids
Directions–
- Line muffin tin with paper liners. Heat oven to 325*F (163*C)
- In a large mixing bowl, stir together sugar, flour, cocoa, baking powder, baking soda and salt.
- Add eggs, milk, oil and vanilla. Beat on medium speed for one minute.
- Stir in boiling water (the batter will be thin, don’t worry, this is right).
- Fill liners 2/3 full with batter. (I put less than 2/3 batter and and so I ended up with 3/4 filled cupcakes . Strongly suggest you stick to 2/3).
- Bake cupcakes for aproximately 25-30 minutes.
- Cool completely on wire rack before frosting
Cupcakes were light, fluffy and moist. Just perfect!
Note : I reduced the amount of sugar according to my taste and as such, also reduced the portion of cocoa powder. Temperature and timing is also based on my own experience using my oven.
- Stored some of the cupcakes in Ziploc bags, then placed them in a container to freeze
